Chocolate Pecan Pie

What you will need:

  1. 9 in. gluten free pie crust – I used a crust recipe from Comfortably Domestic or you can purchase a pre-made crust from the store.
  2. 4 eggs
  3. 2 egg yolks
  4. 2 1/2 cups of sugar
  5. 3/8 cup of water
  6. 1 cup brown sugar
  7. 3 Tbsp vegan butter, melted
  8. 1 Tbsp molasses
  9. 1 Tbsp vanilla extract
  10. 5 oz. semi-sweet chocolate chips
  11. 1 cup pecans

Preheat oven to 350 degrees and place pie crust in a 9 inch pie plate. Whisk the eggs and yolks in a bowl and then whisk in the sugar, water, brown sugar, butter, molasses and vanilla extract. Line the pie crust with the chocolate chips and pecans. Pour the filling in next and bake at 350 degrees for 1 hour and 10 minutes.
